GENEVA'S SOFT MOLASSES COOKIES
 
1 c. unsulfured blackstrap molasses
3/4 c. white sugar
2 tsp. (powdered) ginger
1 cup solid shortening
1-1/2 tsp. baking soda
1/4 cup cold water
2 eggs, well beaten
4-1/4 cups flour
 
In a large saucepan, put molasses, sugar, ginger and shortening.  Boil one minute;
cool completely.  Add soda dissolved in cold water and eggs.  Stir in flour; chill
overnight.  Roll out on floured board to 1/2 inch thick and generously sprinkle sugar
on top.  Cut out cookies with 3" cookie cutter.  Place on ungreased cookie sheet
and bake at 350 degrees for 12-15 minutes.  Do NOT overbake.
